A luscious, protein-filled, substantial dish – quinoa is delicious, healthy and uncomplicated. We would be happy to eat this alternative to rice, pasta or potatoes every day. Luckily, quinoa is an incredibly versatile ingredient and lends itself well to countless recipe ideas. Our quinoa and fruit salad recipe is particularly colourful and packed with vitamins. Try this creative combination of the pseudocereal with clementines, pomegranate and berries!
Ingredients for 1–2 portions of quinoa and fruit salad:
- 5–7 tbsp quinoa
- 1–2 clementines
- 1 avocado
- 1 tbsp lemon juice
- 50 g red grapes
- 1/2 pomegranate
- 125 g blueberries
- 1 tbsp white balsamic vinegar
- 2 tbsp olive oil
- 6 tbsp orange juice
- 1/2 tsp curry powder
- 1/2 tbsp soya yoghurt
- Salt and pepper
Preparation time: approx. 25 minutes
Rinse the quinoa thoroughly, simmer in plenty of water for approx. 15 minutes, drain.
Peel the clementines, remove as much as possible of the white pith and cut into bite-sized pieces. Cut the avocado in half, remove the stone, loosen the flesh from the peel, chop into bite-sized pieces and mix with lemon juice. Wash and halve the grapes. Tap out the pomegranate seeds.
Divide the quinoa between the glasses, layer the prepared fruit and blueberries on top.
Purée the vinegar, oil, orange juice, curry powder and soya yoghurt; season to taste with salt and pepper. Pour the dressing over the quinoa and fruit salad before eating.
