Pineapple and grape sandwich

A sandwich without any meat or cheese? Does it taste good? It sure does! Try our deliciously fruity pineapple and grape sandwich and see for yourself! Pineapple and grapes, together with tofu and cottage cheese, on rye bread reveal their potential as a delicious sandwich filler. Perfect for a family breakfast or lunchbox.

Ingredients for 46 pineapple and grape sandwiches:

  • 250 g tofu
  • 2 tbsp sunflower oil
  • Salt and pepper
  • 400–500 g pineapple
  • 100 g red grapes
  • 1 bunch of rocket leaves
  • 4–6 slices of rye bread
  • 4–6 heaped tbsp cottage cheese
  • 1 tbsp red peppercorns

Preparation time: approx. 25 minutes


Cut the tofu into 12 thin slices. Heat the oil in a pan, fry the tofu slices over a high heat until both sides are golden brown. Remove the tofu from the pan and set it to one side. Season with salt and pepper.

Peel and quarter the pineapple, remove the core and cut into thin slices. Wash and slice the grapes. Wash and spin dry the rocket leaves.

Spread the cheese on the slices of bread and sprinkle with red pepper. To finish, top half the slices of bread with rocket, pineapple, grapes and tofu, place the remaining slices of bread on top and cut the sandwiches in half.
