Do crunchy beans and juicy oranges really go well together? Because we love unusual food ideas, we had to try this out. The result was our recipe for orange and bean salad, accompanied by chicken, tomatoes and a few other ingredients. We love this surprising combination as it tastes delicious! A fabulously healthy meal for everyone who likes it fast and filling.
Ingredients for 2 portions of orange and bean salad
- 160 g chicken breast
- 200 g green beans
- 200 g colourful cherry tomatoes
- 2 oranges
- 1 large handful of strawberries
- 1 small handful of basil leaves
- 1/2 bunch of chives
- 80 ml apple juice
- 1 tbsp soya yoghurt
- Salt and pepper
Preparation time: approx. 35 minutes
Rinse the chicken and pat it dry. Cover with water and simmer in a saucepan for approx. 10 minutes. Remove the saucepan from the hob.
Wash the beans and cook them in boiling water for 6 to 8 minutes. Drain and refresh with cold water. Wash and halve the tomatoes. Peel and segment the oranges, remove the white pith. Wash and quarter the strawberries.
Chop the basil and chives roughly, blend them with apple juice and soya yoghurt until smooth; season to taste with salt and pepper.
Remove the chicken from the water, tear into bite-sized pieces; season with salt and pepper. Mix with the prepared salad ingredients and serve with the dressing.
