It’s hard for any of us to concentrate with a rumbling tummy. At school or in the office, the brain needs long-lasting sustenance and easily accessible energy.
Sandwiches made from moist, whole grain bread, fruity energy balls and crunchy walnuts are among the best substantial snacks – and they don’t stress the body. All of these are the perfect complement to a colourful mix of berries in a fruit cone! This is real brain food that makes for a healthy and uncomplicated lunchbox.
The following suggestions will complement your lunch of berries and whole grains:
For the sandwiches: Simply cut 1 or 2 slices of whole grain bread into star shapes, and top with cottage cheese, vegetables (e.g. slices of grilled courgette or carrot) and some cress.
The energy balls contain the following ingredients:
- 50 g sunflower seeds
- 50 g almonds
- 150 g dried apricots
- 1 tsp honey
- 1 tbsp orange juice
Chop up all the ingredients and mix together until lumps begin to form. Roll the mixture into small balls. All done!
Fresh blueberries and raspberries are an added source of vitamins and make for particularly good snacks when eaten from a small ice cream cone.
Walnuts are rich in B vitamins and lecithin, which are excellent for maintaining a healthy nervous system and brain. These delicious nuts are also a must for our berry and whole grain lunchbox.
