Healthy homemade banana ice cream

You are looking for a healthy homemade ice cream? Here we go! This recipe is super easy to prepare. You only need 3 ingredients and there is no need of an ice cream maker!

Ingredients (makes 8 servings)
4 bananas
16 graham crackers, prepared or homemade (recipe below)
300 g blueberries or chopped strawberries

  1. Peel, slice and freeze bananas for 2 hours.
  2. Place frozen banana slices in a food processor or a blender. Cover and blend until bananas become a creamy smooth custard.
  3. Spoon 2 to 3 tablespoons of frozen banana custard onto 8 crackers. Press berries into frozen banana custard around all sides, top with remaining crackers. Freeze 5 minutes or store in airtight container until ready to serve.

Tip: Homemade graham crackers
Preheat oven to 180°C. Combine 100 g whole-wheat flour, 50 g all-purpose flour, 1 teaspoon ground cinnamon, 1/2 teaspoon baking powder, 1/8 teaspoon baking soda and 1/4 teaspoon salt. Rub 3 tablespoons butter into flour mixture until it is a coarse mixture. Stir in 3-1/2 tablespoons honey, 3 tablespoons plain yogurt and 1/4 teaspoon vanilla extract until it forms a dough. On lightly whole-wheat floured surface, roll into 30 x 15 cm rectangle, about 0,5 cm thick, place on baking sheet. Bake 15 minutes or until lightly crisp. Cut into sixteen squares while warm.
