Who said vegetables were boring! Our healthy carrot cake is not only delicious, it is also suitable for vegans and needs just a few ingredients, the most important being juicy carrots, a few crunchy nuts and wholemeal flour.

Rüeblitorte, as it is known in Switzerland, has long been a specialty in the country. In the English-speaking world, carrot cake is always a popular choice. And that’s not surprising: the carrots give the cake a sweet and fruity flavour and make it beautifully moist. It is very easy to make, as all the ingredients are simply stirred together. Healthy baking can be this delicious!

  • 400 g carrots, grated
  • Juice of one lemon
  • 180 ml sunflower oil
  • 400 g wholemeal flour
  • 1 sachet baking powder
  • Seeds from one vanilla pod
  • 200 g cane sugar
  • 100 g chopped walnuts
  • Pinch of cinnamon

Mix together the dry ingredients in a bowl. Fold in the remaining ingredients and the grated carrots. Pour the mixture into a greased loaf tin and bake at 180°C (top and bottom heat) for 50 to 60 minutes. Using a skewer, check whether the cake is cooked through. Allow to cool and enjoy.
