Fruit and rice bowl

Risolatte alla frutta

We love rice – in this case pudding rice. Sweet, creamy pudding rice always hits the spot and tastes delicious as a snack or when you’re on the move. Thanks to the addition of grapes, berries, mango, grapefruit and mint, our quick recipe for our fruit and rice bowl adds a fruity twist to the popular “soul food” from our childhood days!

Ingredients for 2 portions of our fruit and rice bowl:

  • 125 g pudding rice
  • 600 ml almond milk (unsweetened)
  • 2 tbsp maple syrup
  • 1 mango
  • 1 grapefruit
  • 4 strawberries
  • 10 green grapes
  • 10 raspberries
  • 10 blackberries
  • 1 tbsp cacao nibs
  • Some fresh mint

Preparation time: approx. 35 minutes

Method:

Add the rice, almond milk and maple syrup to a saucepan and slowly bring to the boil. Reduce the heat, simmer for approx. 30 minutes, stirring every now and then with a wooden spoon.

While the rice is cooking, peel the mango and cut the flesh into thin strips. Peel and segment the grapefruit, remove the white pith. Wash the strawberries and cut into bite-sized pieces. Wash and halve the grapes.

Divide the rice between the bowls, arrange the raspberries, blackberries and prepared fruit on top. Garnish with the cacao nibs and mint.
