Crunchy coleslaw with chicken and grapes

Creative coleslaw! Chicken, grapes, peanuts and onions add that extra something to healthy white cabbage. Coleslaw always tastes deliciously fresh and is best prepared a day in advance.

Ingredients for crunchy coleslaw with chicken and grapes:

  • 250 g shredded white cabbage (or finely sliced white cabbage)
  • White wine vinegar, salt, oil, caraway seeds and pepper
  • 1 onion
  • 125 g cooked, chopped chicken
  • 75 g seedless grapes
  • 40 g chopped peanuts
  • 3 finely chopped spring onions

To prepare the coleslaw:

Place the shredded cabbage in a bowl, add white wine vinegar and salt. Chop the onion finely, stir in some white wine vinegar, caraway seeds and oil and pour everything over the white cabbage. Allow to marinate for a few hours and season to taste.

Serve the coleslaw in a bowl with the cooked chicken, grapes, peanuts and spring onions.
