Cauliflower, broccoli and pineapple salad

You don’t always need the saucepan to put together a healthy snack. Many types of vegetables, such as cauliflower and broccoli, can also be eaten raw, retaining the valuable vitamins, iron and calcium. So what delicious meal can be conjured up using these popular members of the cabbage family? Quite simply – a quick salad that tastes wonderfully aromatic and fresh thanks to the addition of pineapple and spinach. The secret ingredient is the sophisticated sesame and ginger dressing!

Ingredients for cauliflower, broccoli and pineapple salad:

  • 325 g cauliflower florets, sliced
  • 180 g broccoli florets, sliced
  • 150 g pineapple, sliced thinly
  • 150 g fresh spinach leaves
  • 2 tsp black sesame seeds

Ingredients for the sesame and ginger dressing:

  • 3 tbsp spring onions, chopped
  • 2 tbsp coriander, chopped
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp freshly grated ginger
  • 1 tbsp honey
  • 1 tsp water
  • 1 tsp chopped garlic

Method:

Place all the salad ingredients in a salad bowl or divide them up into small individual bowls to serve.

To make the dressing, simply mix the ingredients together and pour over the cauliflower, broccoli and pineapple salad.

To add a crunchy finish, sprinkle the black sesame seeds on top.
