We love salmon, Swiss chard, berries and oranges. Today, we are simply putting them all together and proudly present our delicious blueberry and Swiss chard salad with salmon – a protein-rich vitamin bomb for anyone looking for a fresh and fruity substantial snack.
Ingredients for two portions of blueberry and Swiss chard salad with salmon:
- 2 oranges
- 100 g baby Swiss chard
- 1 fig
- 2 radishes
- 60 ml orange juice
- 1 tbsp olive oil
- 1 tbsp soya yoghurt
- Salt and pepper
- 1 large handful of blueberries
- 2 salmon fillets, each approx. 160 g, skinned and boned
- 2 tbsp sunflower oil
Preparation time: approx. 30 minutes
Here’s how to prepare your blueberry and Swiss chard salad with salmon:
Peel and segment the oranges, remove all the white pith. Wash and spin dry the Swiss chard. Wash the fig and cut into thin slices. Wash the radishes and cut into thin slices also.
Mix the orange juice with the olive oil and soya yoghurt, season with salt and pepper. Mix the prepared salad ingredients and the blueberries with the orange dressing.
Rinse the salmon and dab it dry. Season with salt and pepper. Heat the sunflower oil in a grill pan, fry the salmon over a medium to high heat for about 2 minutes on each side. To finish, place the salmon on top of the salad and serve immediately.
