Have you heard of sweetheart cabbage? Not yet? Then it’s high time you tried this healthy vegetable as it is unbelievably versatile. Today, we show you how you can use it raw with berries, mango and nuts to make a blueberry and sweetheart cabbage salad. A crunchy snack for adventure lovers!
Ingredients for 2 portions of blueberry and sweetheart cabbage salad:
- 200 g sweetheart cabbage
- 1 grapefruit
- 1 mango
- Small handful of hazelnuts
- 2 sprigs each of coriander and flat-leaf parsley
- 60 ml orange juice
- 2 tbsp olive oil
- 1 tbsp soya yoghurt
- Salt and pepper
- Handful of blueberries
- 1/2 tsp each of chilli flakes and sesame seeds
Preparation time: approx. 30 minutes
Quarter the sweetheart cabbage, remove the core and cut into thin strips. Peel the grapefruit, remove the white pith and slice thinly. Peel and slice the mango. Halve the hazelnuts. Pick the coriander and parsley leaves.
To make the dressing, mix the orange juice with the olive oil and soya yoghurt, season with salt and pepper.
To finish, serve the prepared fruit and vegetables with the blueberries in bowls, sprinkle with chilli flakes and sesame seeds and drizzle with the orange and yoghurt dressing.
