Banana and buckwheat waffles

Bananen-Buchweizen-Waffeln

We love waffles! They are quick to prepare and go really well with fresh fruit. We just couldn’t get enough of these banana and buckwheat waffles. Is that the same for you?

Ingredients for 5–6 waffles:

  • 200 g spelt flour
  • 60 g buckwheat flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • 300 ml soya milk
  • 4 ripe bananas
  • 1 tbsp olive oil
  • 1 tsp vanilla extract
  • 4 tbsp honey
  • 1 tsp cinnamon
  • 2 tbsp grated dark chocolate
  • 150 g blueberries

Preparation time: approx. 25 minutes

Method:

  1. Sieve the spelt flour, buckwheat flour, salt and baking powder into a bowl.
  2. Blend the soya milk with 2 bananas in a blender, add this to the flour mixture and work everything to form a smooth batter. Stir in the oil and vanilla extract. Allow the batter to rest for 10 minutes.
  3. During this time, peel the remaining 2 bananas and cut them into slices. Put the honey and cinnamon into a small saucepan and warm slightly.
  4. Preheat the waffle iron and bake the batter into waffles, one batch at a time.
  5. Before serving, garnish the banana and buckwheat waffles with the grated chocolate, blueberries and sliced banana and then pour the warmed honey over the waffles.
