Asian food is unbelievably creative and delicious. Today’s recipe is an example of that wonderful creativity: an Asian bowl with grapes. In this dish, udon noodles are accompanied by a colourful mix of grapes, mango, rocket and carrots, just to mention a few ingredients.
Ingredients for 1–2 portions of Asian bowl with grapes:
- 150 g udon noodles
- 1/2 mango
- 70 g red grapes
- 1/2 bunch of rocket leaves
- 100 g carrots
- 1–2 spring onions
- 4 tbsp soya sauce
- A few drops of sesame oil
- 1 tbsp olive oil
- 1 tbsp lime juice
- 50 ml grape juice
- 1/2 tsp chilli flakes
Preparation time: approx. 25 minutes
Prepare the noodles according to the instructions on the packet. Peel the mango, cut the flesh into bite-sized pieces. Wash and halve the red grapes. Wash and spin dry the rocket leaves. Peel the carrots and cut into fine strips. Wash the spring onions and cut them into roughly 5 cm pieces; halve them lengthways.
Mix the soya sauce with the oils, lime juice and grape juice.
Tip: If possible, heat up the noodles before eating, arrange the prepared fruit and vegetables on top, sprinkle with chilli flakes and serve with the dressing.
